The strong flavours of toasted sesame oil and lemon juice breathe life into this easy-to-make salad with adding any salt or spices. Celery is rich in mineral potassium, which helps to lower blood pressure, while the chickpeas provide phytoestrogens to help balance hormones, which in turn reduces strain on your liver to regulate blood-sugar levels.

Serves 2

1 x 410g can chickpeas, rinsed and drained

2 celery sticks, finely chopped

6 pieces marinated artichoke heart, roughly chopped

6 spring onions, finely chopped

1 tbsp sesame seeds (untoasted)

1 tbsp toasted sesame oil, or to taste

The juice of ½ a lemon

Mix all of the ingredients together and serve with a leafy green salad, including a portion of Super Greens Mix.
