Patrick’s favourite “all-rounder” seed is chia – a seed which was part of the staple diet of the peoples of pre-BC Meso-America. This ancient seed is superior to flax seed (Patrick’s other favourite seed) because it is higher in Omega-3 and is much lower in sodium. Chia is the highest vegetarian source of Omega-3 fats, is high in fibre and contains more protein – at 20% – than many other grains.

CHIA SEED & LEMON DRINK
- 2 tbsp chia seeds
- 1 glass spring water
- Juice from one lemon
- 2 tbs. honey
- Pinch of Himalayan salt
- Add the chia seeds to your glass of water and soak for 20 minutes.
- Once the seeds have become gelatinous, put them and the rest of the ingredients into a blender.
- Blend well for a few minutes then drink straight away.
